Description
This hearty Italian Sausage Breakfast Casserole is perfect for brunch, holidays, or make-ahead weekday breakfasts. Loaded with flavorful sausage, melty cheese, and fluffy eggs, it’s baked to golden perfection and always a crowd-pleaser.
Ingredients
- 1 lb Italian sausage (mild or spicy)
- 1 small onion, diced
- 1 small red bell pepper, diced
- 1 small green bell pepper, diced
- 6 large eggs
- 2 cups milk
- 1 tsp salt
- 1/2 tsp ground black pepper
- 6 slices white or Italian bread, cut into cubes
- 1 1/2 cups shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese

Instructions
- Preheat oven to 350°F (175°C).
- Cook sausage and vegetables: In a skillet over medium heat, cook sausage with diced onion and bell peppers until browned and vegetables are soft. Drain excess grease.
- Prepare egg mixture: In a large bowl, whisk together eggs, milk, salt, and pepper.
- Assemble: Grease a 9×13-inch baking dish. Spread the bread cubes evenly in the bottom. Top with the sausage and vegetable mixture, then sprinkle mozzarella cheese over the top.
- Add egg mixture: Pour the egg mixture evenly over the casserole, pressing lightly to help the bread absorb the liquid.
- Top with Parmesan: Sprinkle grated Parmesan over everything.
- Bake: Bake uncovered for 45–50 minutes, or until the center is set and the top is golden brown.
- Cool slightly before serving. Let rest for 5–10 minutes before slicing.

Notes
- You can assemble this casserole the night before and refrigerate—just bake it in the morning.
- Try adding spinach, mushrooms, or using cheddar or pepper jack for a flavor variation.
- Day-old or stale bread works best for better texture.
- Leftovers reheat well and can be frozen in individual portions.
