Blue Cheese Crusted Flank Steak

Ingredients

  • 1 flank steak, 1.5 – 2 lbs
  • 1 cup blue cheese, crumbled
  • 2 tablespoons panko bread crumbs
  • ½ tablespoon butter

Flank Steak Marinade

  • ½ cup olive oil
  • ½ cup balsamic vinegar
  • ½ teaspoon salt
  • ½ teaspoon fresh cracked black pepper
  • 2 green onions, roughly chopped
  • 2 tablespoons brown sugar (dark preferred, light works)

Instructions

Combine marinade ingredients in the 9″x13″ dish and whisk together. Set aside. Place the flank steak smooth side up and score the top in 1″ sections. Move the steak to the marinade. Marinate each side of the steak for 30–45 minutes. When the scored side is up, spoon extra marinade into the scores. As the steak is close to finishing the marinade, preheat the oven to high broil with a rack as close to the top as possible without the steak touching. Place the steak scored side up on the broiler pan and broil for about 3 minutes. Flip and broil the other side for another 3 minutes. While broiling, melt the butter in the microwave, combine with bread crumbs, and have blue cheese ready. After broiling both sides, remove the steak and flip it so the scored side is up. Press the blue cheese crumbles into the scores, sprinkle the bread crumbs on top, and return to the broiler for about 5 minutes until the cheese is bubbly and browned. Let rest for 10–15 minutes, then slice thinly against the grain and enjoy!

Notes

For best flavor, marinate the steak for a full hour if possible. Scoring the steak allows the marinade and cheese crust to penetrate better. Use a sharp knife to slice thinly against the grain for the most tender bites. If you prefer a stronger blue cheese flavor, add a bit more cheese before broiling. Serve with a simple green salad or roasted vegetables for a complete meal.
