Chipotle Beer Braised Beef Tacos

These chipotle beer braised beef tacos are one of my favorite easy weeknight meals! With just a few simple ingredients and 10 minutes of prep, the slow cooker does all the work to bring you the most flavorful, melt-in-your-mouth shredded beef.

Ingredients

Beer Braised Beef
2 pounds chuck roast
2 cups chipotle peppers in adobo (about 2 small cans)
2 cups dark Mexican beer (like Modelo Negra or Dos Equis Ambar)
2 tablespoons lime juice
2 tablespoons light brown sugar
1 teaspoon kosher salt

Instructions

In a large skillet over high heat, quickly sear the roast for 1–2 minutes per side (optional but adds flavor).
Add the beef, chipotle peppers (with their sauce), beer, lime juice, brown sugar, and salt to the base of your slow cooker.
Cover and cook on low for 10 hours, or until the beef falls apart.
Transfer beef to a large sheet pan. Shred, then drizzle with chipotle mixture and about 1 cup of the cooking liquid.
Broil on high for 3–5 minutes until crispy and browned at the edges (optional, but highly recommended).
Serve with tortillas, pico de gallo, crema or sour cream, and fresh cilantro.

Notes

Chipotle Heat Level: Use one can of chipotle peppers for medium heat, or two for extra smoky spice. If you prefer milder tacos, scrape out the seeds before adding.
No Beer? You can substitute beef broth for the beer, though the flavor won’t be as rich. A splash of apple cider vinegar can help replace the tang.
Make-Ahead Tip: The beef can be made a day ahead and crisped under the broiler just before serving. It also freezes beautifully.
Tortilla Choice: Sourdough tortillas add a nice tang, but you can use any soft corn or flour tortilla. Warm or char them for best texture.
Serving Suggestion: Pairs perfectly with a simple cabbage slaw, lime wedges, or street corn on the side.
