Prep Time: 20 minutes
Cook Time: 30 minutes
Total Time: 50 minutes
Ingredients
Chicken:
6 boneless skinless chicken thighs
1 ½ teaspoons salt
1 tablespoon garlic powder
1 tablespoon smoked paprika
1 tablespoon parsley flakes
1 teaspoon ground black pepper
4 tablespoons olive oil
Veggies:
3 bell peppers (red, yellow, orange), sliced into ½-inch strips
1 large red onion, sliced into ¼-inch strips
1 teaspoon salt
1 teaspoon garlic powder
1 teaspoon smoked paprika
1 teaspoon parsley flakes
2 tablespoons olive oil

Instructions
Preheat your oven to 400°F (200°C).
Prepare the Chicken:
In a bowl or resealable plastic bag, combine chicken thighs with salt, garlic powder, smoked paprika, parsley flakes, ground black pepper, and olive oil. Mix well to coat the chicken evenly. Let marinate for at least 20 minutes while you prep the vegetables.
Prepare the Veggies:
Slice the bell peppers and red onion. In a separate bowl, toss them with salt, garlic powder, smoked paprika, parsley flakes, and olive oil until evenly coated.
Assemble on the Sheet Pan:
Line a large baking sheet with parchment paper. Spread the seasoned vegetables and chicken evenly across the pan.
Bake:
Place in the oven and bake for 30 minutes, or until the chicken is cooked through and the vegetables are tender and slightly caramelized.
Serve:
Remove from the oven and let rest a few minutes. Slice the chicken and serve with warm tortillas, a smear of mayonnaise, and fresh guacamole.

Notes
• For crispier vegetables, broil for the last 2–3 minutes of cooking.
• You can substitute chicken thighs with chicken breast if preferred—just monitor doneness to avoid drying.
• Add a squeeze of fresh lime juice or a sprinkle of chopped cilantro for a zesty finish.
• These fajitas are great for meal prep—store in airtight containers for up to 4 days.
