These Apple Pie Enchiladas take everything you love about warm, spiced apple pie and wrap it in soft flour tortillas, then bake it all in a rich caramel-like sauce. The result is a crowd-pleasing dessert that’s easy enough for weeknights and special enough for holiday tables. Serve them warm with ice cream or whipped cream for the ultimate treat.
Ingredients
For the Enchiladas:
- 2 (21 oz) cans apple pie filling (or 4 cups homemade)
- 8 (8-inch) flour tortillas
- 1 tsp ground cinnamon
For the Sauce:
- ½ cup unsalted butter
- ½ cup granulated sugar
- ½ cup brown sugar, packed
- ½ cup water
- ½ tsp vanilla extract

Instructions
1. Preheat the Oven:
- Preheat oven to 350°F (175°C).
- Lightly grease a 9×13-inch baking dish.
2. Assemble the Enchiladas:
- Spoon about ½ cup apple pie filling onto the center of each tortilla.
- Sprinkle with a pinch of cinnamon.
- Roll tightly, folding in the sides as you go, and place seam-side down in the prepared baking dish.
- Repeat with all tortillas.
3. Prepare the Sauce:
- In a medium saucepan, melt butter over medium heat.
- Stir in granulated sugar, brown sugar, and water.
- Bring to a boil, stirring often, then reduce heat and simmer for 3 minutes.
- Remove from heat and stir in vanilla extract.
4. Pour the Sauce:
- Pour the warm sauce evenly over the enchiladas in the baking dish, making sure they’re well coated.
5. Bake:
- Cover with foil and bake for 20 minutes.
- Remove foil and bake for an additional 10 minutes, or until the sauce is bubbling and the tortillas are golden.
6. Serve:
- Allow to cool for 5–10 minutes before serving.
- Best enjoyed warm with vanilla ice cream or whipped cream.
