  • 1 tbsp olive oil
  • 1 tbsp curry powder
  • 1 tsp ground turmeric
  • 1 tsp ground ginger
  • ½ tsp chili powder (optional)
  • 2 garlic cloves, minced
  • 1 tbsp lime juice
  • 1 tbsp honey (optional, for sweetness)
  • Salt and pepper, to taste

For the Cod

  • 4 cod fillets (about 6 oz each)
  • Salt and pepper, to taste
  • Fresh cilantro or parsley, chopped (optional, for garnish)
  • Lime wedges (optional, for serving)

Instructions

1. Prepare the Sauce

  • In a medium saucepan, heat the olive oil over medium heat. Add the minced garlic and sauté for 1 minute until fragrant.
  • Stir in the curry powder, turmeric, ginger, and chili powder (if using). Cook for 1–2 minutes to toast the spices.
  • Pour in the coconut milk and bring to a gentle simmer. Stir in the lime juice, salt, pepper, and honey (if using). Let simmer for 5 minutes to slightly thicken.

2. Prepare the Cod

  • Preheat the oven to 375°F (190°C).
  • Pat the cod fillets dry and season with salt and pepper on both sides.
  • Place the fillets in a baking dish in a single layer. Pour the coconut curry sauce evenly over the cod.

3. Bake the Cod

  • Bake uncovered for 20–25 minutes, or until the cod is cooked through and flakes easily with a fork.

4. Finish and Serve

  • Garnish with chopped cilantro or parsley, and serve with lime wedges on the side.
