Strawberry French Toast Bake

Ingredients

French Toast Base:

  • 1 loaf French bread, cubed and lightly toasted
  • 1 lb fresh strawberries, sliced
  • 8 large eggs
  • 1 cup milk
  • 1 cup Greek yogurt
  • ½ cup white sugar
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • 1 teaspoon vanilla extract

Crumble Topping:

  • ½ cup brown sugar
  • ½ cup all-purpose flour
  • 1 stick (½ cup) salted butter, cold and cubed
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg

Instructions

  1. Prep the Dish:
    Spray a 9×13-inch baking dish with non-stick cooking spray.
    In a large bowl, toss together the cubed bread and sliced strawberries. Pour the mixture into the prepared dish.
  2. Make the Custard:
    In another large bowl, whisk together eggs, milk, Greek yogurt, sugar, cinnamon, nutmeg, and vanilla until fully combined.
    Pour evenly over the bread and strawberries.
  3. Chill:
    Cover and refrigerate for at least 2 hours, or overnight for best results.
  4. Bake – Step One:
    Preheat oven to 350°F (175°C).
    Bake uncovered for 20 minutes.
  5. Prepare the Crumble:
    While the base is baking, mix together brown sugar, flour, cold cubed butter, cinnamon, and nutmeg in a bowl. Use a pastry cutter or your fingers to create a crumbly texture.
  6. Bake – Step Two:
    After 20 minutes, remove the French toast bake from the oven. Sprinkle the crumble topping evenly over the top.
    Return to oven and bake for an additional 20–25 minutes, or until golden and set in the center.
  7. Serve:
    Serve warm with extra fresh strawberries, a dusting of powdered sugar, or your favorite syrup.
