- 4 large eggs
- 4 slices thick Texas toast
- 2 slices Colby Jack cheese
- 2 slices Pepper Jack cheese

Instructions
- Prep the Bread
Butter one side of each slice of bread and set aside. - Fry the Eggs
In a frying pan over low heat, melt a bit of butter.
Fry the eggs to your desired doneness—sunny-side up, over easy, or fully cooked.
Season with salt and pepper. Set eggs aside once done. - Assemble the Sandwich
In a clean frying pan or griddle, place one slice of bread, buttered side down.
Layer with:- 1 slice Colby Jack
- 2 fried eggs
- 1 slice Pepper Jack
- 1 slice of bread, buttered side up
- Grill the Sandwich
