Set up a breading station with three shallow bowls: one with flour, one with beaten eggs, and one with breadcrumbs. Dredge each rolled chicken breast in the flour, dip it in the egg, and coat it evenly with breadcrumbs. Heat a skillet over medium heat and add a tablespoon or two of olive oil or butter. Sear each chicken roll on all sides until golden—about 3 to 4 minutes per side.
