Description

These Chocolate Cherry Coconut Truffles are rich, chewy, and packed with sweet cherries, coconut, and smooth chocolate. Perfect for holidays, gifting, or a bite-sized indulgence!

Ingredients

For the Truffles:

  • 1 cup sweetened shredded coconut
  • 1/2 cup dried cherries, finely chopped
  • 1/2 cup sweetened condensed milk
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt

For the Chocolate Coating:

  • 8 oz dark or semi-sweet chocolate, chopped
  • 1 teaspoon coconut oil (optional, for shine)

For Garnish (Optional):

  • 2 tablespoons shredded coconut
  • 2 tablespoons finely chopped dried cherries
  • White chocolate drizzle

Instructions

Make the Truffle Filling:
In a bowl, combine shredded coconut, chopped dried cherries, sweetened condensed milk, vanilla extract, and salt. Stir until fully mixed and sticky.

Chill & Shape:
Refrigerate for 30 minutes to firm up. Roll into 1-inch balls and place on a parchment-lined tray. Freeze for 15–20 minutes to set.

Coat in Chocolate:
In a microwave-safe bowl, melt chocolate and coconut oil in 30-second intervals, stirring until smooth. Using a fork or toothpick, dip each chilled truffle into the melted chocolate, coating evenly. Let excess drip off, then place back on the parchment-lined tray.

Garnish & Set:
Sprinkle with coconut or chopped cherries while the chocolate is still wet. Drizzle with melted white chocolate for a decorative touch. Refrigerate for 30 minutes until chocolate is set. Enjoy chilled or at room temperature.

Notes

Want an extra cherry surprise? Add a whole maraschino cherry inside before rolling.
Use dark chocolate for a richer, less sweet version.
Store leftovers in an airtight container in the fridge for 1 week or freeze for up to 3 months.
