Description

This hearty Italian Sausage Breakfast Casserole is perfect for brunch, holidays, or make-ahead weekday breakfasts. Loaded with flavorful sausage, melty cheese, and fluffy eggs, it’s baked to golden perfection and always a crowd-pleaser.

  • 1 lb Italian sausage (mild or spicy)

  • 1 small onion, diced

  • 1 small red bell pepper, diced

  • 1 small green bell pepper, diced

  • 6 large eggs

  • 2 cups milk

  • 1 tsp salt

  • 1/2 tsp ground black pepper

  • 6 slices white or Italian bread, cut into cubes

  • 1 1/2 cups shredded mozzarella cheese

  • 1/2 cup grated Parmesan cheese


Instructions

  • Preheat oven to 350°F (175°C).

  • Cook sausage and vegetables: In a skillet over medium heat, cook sausage with diced onion and bell peppers until browned and vegetables are soft. Drain excess grease.

  • Prepare egg mixture: In a large bowl, whisk together eggs, milk, salt, and pepper.

  • Assemble: Grease a 9×13-inch baking dish. Spread the bread cubes evenly in the bottom. Top with the sausage and vegetable mixture, then sprinkle mozzarella cheese over the top.

  • Add egg mixture: Pour the egg mixture evenly over the casserole, pressing lightly to help the bread absorb the liquid.

  • Top with Parmesan: Sprinkle grated Parmesan over everything.

  • Bake: Bake uncovered for 45–50 minutes, or until the center is set and the top is golden brown.

 

  • Cool slightly before serving. Let rest for 5–10 minutes before slicing.


Notes

  • You can assemble this casserole the night before and refrigerate—just bake it in the morning.

  • Try adding spinach, mushrooms, or using cheddar or pepper jack for a flavor variation.

  • Day-old or stale bread works best for better texture.

 

  • Leftovers reheat well and can be frozen in individual portions.
