This hearty Italian Sausage Breakfast Casserole is perfect for brunch, holidays, or make-ahead weekday breakfasts. Loaded with flavorful sausage, melty cheese, and fluffy eggs, it’s baked to golden perfection and always a crowd-pleaser.

Ingredients

  • 1 lb Italian sausage (mild or spicy)
  • 1 small onion, diced
  • 1 small red bell pepper, diced
  • 1 small green bell pepper, diced
  • 6 large eggs
  • 2 cups milk
  • 1 tsp salt
  • 1/2 tsp ground black pepper
  • 6 slices white or Italian bread, cut into cubes
  • 1 1/2 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Cook sausage and vegetables: In a skillet over medium heat, cook sausage with diced onion and bell peppers until browned and vegetables are soft. Drain excess grease.
  3. Prepare egg mixture: In a large bowl, whisk together eggs, milk, salt, and pepper.
  4. Assemble: Grease a 9×13-inch baking dish. Spread the bread cubes evenly in the bottom. Top with the sausage and vegetable mixture, then sprinkle mozzarella cheese over the top.
  5. Add egg mixture: Pour the egg mixture evenly over the casserole, pressing lightly to help the bread absorb the liquid.
  6. Top with Parmesan: Sprinkle grated Parmesan over everything.
  7. Bake: Bake uncovered for 45–50 minutes, or until the center is set and the top is golden brown.
  8. Cool slightly before serving. Let rest for 5–10 minutes before slicing.

  • You can assemble this casserole the night before and refrigerate—just bake it in the morning.
