Ingredients
For the Chicken Filling:
2 tablespoons olive oil
1 lb boneless, skinless chicken breasts or thighs, thinly sliced
1 teaspoon Italian seasoning
1/2 teaspoon garlic powder
1/2 teaspoon smoked paprika
Salt and pepper, to taste
1 medium yellow onion, thinly sliced
1 red bell pepper, thinly sliced
1 green bell pepper, thinly sliced
6 slices provolone cheese
For the Sandwiches:
4 hoagie rolls or sub rolls, toasted
Optional toppings: mayo, hot sauce, mustard, pickled peppers

Instructions
Cook the Chicken
Heat 1 tablespoon oil in a large skillet over medium-high heat. Add sliced chicken, season with Italian seasoning, garlic powder, paprika, salt, and pepper. Sauté until chicken is golden and cooked through, about 5–7 minutes. Transfer to a plate.
Sauté Veggies
In the same pan, heat the remaining oil. Add onions and bell peppers. Cook until soft and slightly caramelized, about 8–10 minutes.
Combine & Add Cheese
Return the chicken to the pan with the veggies. Stir to combine and heat through. Lay provolone slices over the top, cover, and let melt for 2–3 minutes.
Assemble Sandwiches
Toast hoagie rolls, if desired. Spoon the cheesy chicken and veggie mixture into each roll. Add any extra toppings and serve hot!

Notes
Swap provolone for white American or mozzarella if you prefer. For extra heat, stir in jalapeños or red pepper flakes. Want it saucier? Add a splash of Worcestershire or hot sauce while cooking the chicken.
