Ingredients
For the Pork:
1 pork tenderloin (about 1–1.5 lbs)
1 tablespoon Cajun seasoning
8–10 slices of bacon (enough to wrap the tenderloin)
For the Apricot Glaze:
1/4 cup apricot preserves
2 tablespoons Dijon mustard
1 tablespoon honey
1 teaspoon apple cider vinegar
1/2 teaspoon garlic powder
1/2 teaspoon smoked paprika

Instructions
Preheat Oven
Preheat oven to 400°F (200°C). Line a baking sheet with foil and place a wire rack on top (optional but helps bacon crisp).
Season the Pork
Pat pork dry and rub all over with Cajun seasoning.
Wrap with Bacon
Lay bacon slices on a cutting board, slightly overlapping to form a rectangle. Place the pork on top and roll to wrap bacon around the tenderloin. Secure with toothpicks if needed.
Sear (Optional but Recommended)
Heat an oven-safe skillet over medium-high heat. Sear the bacon-wrapped pork on all sides for 2–3 minutes to get some color.
Mix the Glaze
In a small bowl, whisk together apricot preserves, Dijon mustard, honey, vinegar, garlic powder, and paprika.
Bake
Transfer the pork to a baking dish or leave it in the skillet. Brush generously with the glaze. Bake for 25–30 minutes or until internal temp reaches 145°F (63°C). Brush with more glaze halfway through.
Broil to Finish
For extra crispy bacon, broil on high for 2–3 minutes at the end — keep an eye on it!
Rest & Serve
Let rest for 5 minutes before slicing. Drizzle with any extra glaze and serve warm.

Notes
You can substitute peach preserves if apricot isn’t available.
Double the glaze if you want extra for serving!
