Ingredients
- 2 medium sweet potatoes, peeled and sliced into 1/2-inch rounds
- 2 tablespoons olive oil
- Salt and pepper, to taste
- 4 oz goat cheese, softened
- 1/2 cup chopped pecans, toasted
- 3 tablespoons honey (plus more for drizzling)
- 1/2 teaspoon cinnamon (optional)
- Fresh thyme or rosemary, for garnish (optional)

Instructions
1. Preheat oven:
Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
2. Roast the sweet potatoes:
Arrange sweet potato rounds on the baking sheet.
Brush both sides lightly with olive oil and season with salt and pepper.
Roast for 20–25 minutes, flipping halfway through, until fork-tender and lightly golden.
3. Toast the pecans:
While potatoes roast, toast the chopped pecans in a dry skillet over medium heat for 3–5 minutes until fragrant. Set aside to cool.
