These BBQ Beer-Marinated Chicken Skewers are juicy, smoky, and full of flavor thanks to a simple beer-based marinade. Perfect for grilling, these skewers make a fun and easy main dish for cookouts, tailgates, or casual weeknight dinners. Serve them with corn on the cob, coleslaw, or over rice!
Ingredients
For the Marinade
1 cup beer (lager or ale works best)
¼ cup BBQ sauce (your favorite kind)
2 tbsp olive oil
2 tbsp soy sauce
1 tbsp brown sugar
2 cloves garlic, minced
1 tsp smoked paprika
½ tsp onion powder
½ tsp salt
¼ tsp black pepper
For the Skewers
1½ lbs boneless, skinless chicken breasts or thighs, cut into 1.5-inch pieces
Wooden or metal skewers
Extra BBQ sauce for basting (optional)
Chopped parsley or green onion, for garnish (optional)

Instructions
Make the Marinade
In a medium bowl, whisk together the beer, BBQ sauce, olive oil, soy sauce, brown sugar, garlic, smoked paprika, onion powder, salt, and pepper.
Marinate the Chicken
Place the chicken pieces in a large zip-top bag or bowl. Pour the marinade over the chicken, seal or cover, and refrigerate for at least 2 hours (up to 8 hours for more flavor).
Soak Wooden Skewers
If using wooden skewers, soak them in water for at least 30 minutes before grilling to prevent burning.
Assemble the Skewers
Remove chicken from the marinade and thread onto skewers. Discard used marinade.
Grill the Chicken
Preheat grill to medium-high heat (about 400°F).
Grill skewers for 10–12 minutes, turning every few minutes, until chicken is cooked through and lightly charred.
During the last few minutes, brush with extra BBQ sauce if desired.
Serve
Remove from grill, garnish with chopped parsley or green onions, and serve hot.

Notes
You can prep the skewers ahead of time and keep them in the fridge until ready to grill.
These work great with other proteins too—try shrimp or tofu for a twist.
Serve with grilled veggies or over rice for a full meal.
