Sheet Pan Caprese Pizza is a fresh and flavorful twist on traditional pizza, topped with mozzarella, tomatoes, and basil over a golden, crispy crust, then finished with a drizzle of balsamic glaze.
Ingredients
- 1 lb pizza dough (store-bought or homemade)
- 1 tablespoon olive oil
- 1 cup shredded mozzarella cheese
- 6 oz fresh mozzarella, sliced
- 2–3 medium tomatoes, sliced
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 teaspoon dried oregano
- Fresh basil leaves
- 2 tablespoons balsamic glaze (for drizzling)

Instructions
Preheat oven to 450°F (230°C). Lightly grease a sheet pan with olive oil. Roll out or stretch pizza dough to fit the sheet pan. Press it into the corners and edges. Brush the dough lightly with olive oil. Pre-bake for 5–7 minutes until it just begins to firm up. Remove from oven and top with shredded mozzarella, fresh mozzarella slices, and tomato slices. Sprinkle with salt, pepper, and oregano. Return to oven and bake for 12–15 minutes until crust is golden and cheese is bubbly. Remove from oven and let cool slightly. Top with fresh basil leaves and drizzle with balsamic glaze. Slice and serve warm.
Notes
Use heirloom tomatoes for extra color and flavor. Try a garlic olive oil base for added depth. Add a thin layer of pesto under the cheese for a twist.
