Description

Marry Me Chicken Meatballs are tender, juicy chicken meatballs simmered in a creamy sun-dried tomato and garlic parmesan sauce that’s so delicious, it might just inspire a proposal. Perfect over pasta, mashed potatoes, or rice.

Ingredients

  • 1 lb ground chicken
  • 1/3 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 egg
  • 2 cloves garlic, minced
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil (for cooking)

For the sauce:

  • 2 tablespoons butter
  • 3 cloves garlic, minced
  • 1/2 cup sun-dried tomatoes, chopped
  • 1 teaspoon red pepper flakes (optional)
  • 1 cup chicken broth
  • 3/4 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Fresh basil or parsley for garnish

Instructions

In a large bowl, combine ground chicken, breadcrumbs, Parmesan, egg, garlic, onion powder, salt, and pepper. Mix until just combined. Form into 16–18 small meatballs. Heat olive oil in a large skillet over medium heat. Add meatballs and cook, turning occasionally, until browned and cooked through, about 8–10 minutes. Remove and set aside. In the same skillet, melt butter and sauté garlic and sun-dried tomatoes for 1–2 minutes. Stir in red pepper flakes, chicken broth, cream, Parmesan cheese, and Italian seasoning. Simmer for 4–5 minutes until slightly thickened. Return meatballs to the skillet and simmer in the sauce for another 5 minutes, spooning sauce over the top. Garnish with chopped basil or parsley and serve warm over pasta, rice, or mashed potatoes.

Notes

Use ground turkey or beef if preferred. To make ahead, prepare the meatballs and sauce separately and reheat together before serving. Add spinach or mushrooms for extra veggies.
