Description
Corn Ribs are a fun and flavorful way to enjoy corn on the cob. Cut into strips and seasoned with spices, then roasted or grilled until crispy and slightly charred—they curl up like ribs and make a perfect summer snack or side dish.
Ingredients
- 4 ears fresh corn, husked
- 2 tablespoons olive oil
- 1 teaspoon smoked paprika
- ½ teaspoon garlic powder
- ½ teaspoon chili powder
- Salt and pepper to taste
- Optional: fresh lime wedges, chopped cilantro, or grated Parmesan for garnish

Instructions
- Preheat oven to 425°F (220°C) or heat grill to medium-high.
- Carefully cut each ear of corn lengthwise into quarters to create ribs (4 ribs per ear). Use a sharp knife and firm pressure to cut through the cob.
- In a small bowl, mix olive oil with smoked paprika, garlic powder, chili powder, salt, and pepper.
- Brush the corn ribs thoroughly with the spiced oil mixture.
- Arrange on a parchment-lined baking sheet or place directly on grill grates.
- Roast or grill for 15–20 minutes, flipping halfway through, until curled, golden, and lightly charred.
- Garnish with lime, cilantro, or Parmesan if desired. Serve immediately.
