Description

Ingredients

  • 3 large eggs

  • 2 tablespoons milk

  • Salt and pepper, to taste

  • 1 tablespoon butter

  • 1/2 teaspoon dried herbs (optional, such as chives or parsley)

  • Chili flakes or hot sauce, for serving (optional)


Instructions

In a shallow bowl, whisk together the eggs, milk, salt, pepper, and herbs (if using). Place the crumpets in the egg mixture, pressing slightly to help them soak up the liquid. Let sit for a few minutes, flipping once. Heat the butter in a non-stick skillet over medium heat. Add the soaked crumpets and cook for 2–3 minutes per side, or until golden brown and the egg is cooked through. Serve hot, optionally topped with chili flakes or a dash of hot sauce, and with your favorite breakfast sides.


Notes

Crumpets should be slightly stale for best absorption, but fresh ones work too. Serve with sautéed spinach, grilled tomatoes, or crispy bacon for a complete breakfast. You can add cheese to the egg mix for an extra savory version.
