Ingredients

  • 1 ball pizza dough (homemade or store-bought)
  • ½ cup barbecue sauce
  • 1 cup cooked chicken breast, shredded or chopped
  • 1 cup shredded mozzarella cheese
  • ½ cup shredded cheddar cheese

  • 2 tablespoons chopped fresh cilantro (optional)

  1. Preheat oven to 475°F (245°C). If using a pizza stone, place it in the oven while it preheats.
  2. Roll out the pizza dough on a floured surface into a 12-inch circle. Transfer to a pizza peel or baking sheet dusted with cornmeal.
  3. Brush the dough lightly with olive oil. Spread barbecue sauce evenly over the dough, leaving a 1-inch border.

  5. Bake for 10–12 minutes, or until the crust is golden and the cheese is bubbly and slightly browned.
  6. Remove from oven and sprinkle with fresh cilantro if using. Slice and serve hot.

Notes

  • Use smoked gouda or Monterey Jack for a flavor variation.
  • Leftover rotisserie chicken works great in this recipe.
  • For extra crispiness, bake on a preheated pizza stone or steel.
