Description

Shrimp Fajita Pasta Salad is a bold and zesty dish that combines juicy shrimp, tender pasta, colorful sautéed peppers, and a flavorful fajita-seasoned dressing—perfect as a hearty side or a light and satisfying meal.


Ingredients

  • 12 oz rotini or penne pasta

  • 1 lb shrimp, peeled and deveined

  • 1 red bell pepper, sliced

  • 1 yellow bell pepper, sliced

  • 1 green bell pepper, sliced

  • 1/2 red onion, thinly sliced

  • 2 tbsp olive oil

  • 2 tbsp fajita seasoning, divided

  • 1/2 cup sour cream

  • 1/4 cup mayonnaise

  • 2 tbsp lime juice

  • 1/4 cup chopped cilantro

  • Salt and black pepper, to taste


Instructions

  • Cook pasta according to package directions until al dente. Drain and rinse under cold water to cool completely.

  • In a large skillet, heat olive oil over medium-high heat.

  • Toss shrimp with 1 tablespoon of fajita seasoning, then sauté for 2–3 minutes per side until pink and cooked through. Remove and set aside.

  • In the same skillet, add sliced bell peppers and red onion. Sprinkle with remaining fajita seasoning and sauté until tender-crisp. Let cool.

  • In a large bowl, whisk together sour cream, mayonnaise, lime juice, salt, and black pepper to make the dressing.

  • Add cooled pasta, shrimp, and vegetables to the bowl. Toss to coat evenly with the dressing.

  • Stir in chopped cilantro and adjust seasoning to taste.

 

  • Cover and refrigerate for at least 30 minutes before serving for best flavor.


Notes

  • Use grilled shrimp for an extra smoky depth.

  • Adjust the amount of fajita seasoning to suit your spice preference.

 

  • For a lighter version, substitute sour cream and mayo with plain Greek yogurt.
