Description

Shrimp Fajita Pasta Salad is a bold and zesty dish that combines juicy shrimp, tender pasta, colorful sautéed peppers, and a flavorful fajita-seasoned dressing—perfect as a hearty side or a light and satisfying meal.

Ingredients

  • 12 oz rotini or penne pasta
  • 1 lb shrimp, peeled and deveined
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1/2 red onion, thinly sliced
  • 2 tbsp olive oil
  • 2 tbsp fajita seasoning, divided
  • 1/2 cup sour cream
  • 1/4 cup mayonnaise
  • 2 tbsp lime juice
  • 1/4 cup chopped cilantro
  • Salt and black pepper, to taste

Instructions

  1. Cook pasta according to package directions until al dente. Drain and rinse under cold water to cool completely.
  2. In a large skillet, heat olive oil over medium-high heat.
  3. Toss shrimp with 1 tablespoon of fajita seasoning, then sauté for 2–3 minutes per side until pink and cooked through. Remove and set aside.
  4. In the same skillet, add sliced bell peppers and red onion. Sprinkle with remaining fajita seasoning and sauté until tender-crisp. Let cool.
  5. In a large bowl, whisk together sour cream, mayonnaise, lime juice, salt, and black pepper to make the dressing.
  6. Add cooled pasta, shrimp, and vegetables to the bowl. Toss to coat evenly with the dressing.
  7. Stir in chopped cilantro and adjust seasoning to taste.
  8. Cover and refrigerate for at least 30 minutes before serving for best flavor.

Notes

  • Use grilled shrimp for an extra smoky depth.
  • Adjust the amount of fajita seasoning to suit your spice preference.
  • For a lighter version, substitute sour cream and mayo with plain Greek yogurt.
