Shrimp Fajita Pasta Salad is a bold and zesty dish that combines juicy shrimp, tender pasta, colorful sautéed peppers, and a flavorful fajita-seasoned dressing—perfect as a hearty side or a light and satisfying meal.

- 12 oz rotini or penne pasta
- 1 lb shrimp, peeled and deveined
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 green bell pepper, sliced
- 1/2 red onion, thinly sliced
- 2 tbsp olive oil
- 2 tbsp fajita seasoning, divided
- 1/2 cup sour cream
- 1/4 cup mayonnaise
- 2 tbsp lime juice
- 1/4 cup chopped cilantro
- Salt and black pepper, to taste

Instructions
- Cook pasta according to package directions until al dente. Drain and rinse under cold water to cool completely.
- In a large skillet, heat olive oil over medium-high heat.
- Toss shrimp with 1 tablespoon of fajita seasoning, then sauté for 2–3 minutes per side until pink and cooked through. Remove and set aside.
- In the same skillet, add sliced bell peppers and red onion. Sprinkle with remaining fajita seasoning and sauté until tender-crisp. Let cool.
- In a large bowl, whisk together sour cream, mayonnaise, lime juice, salt, and black pepper to make the dressing.
- Add cooled pasta, shrimp, and vegetables to the bowl. Toss to coat evenly with the dressing.
- Stir in chopped cilantro and adjust seasoning to taste.
- Cover and refrigerate for at least 30 minutes before serving for best flavor.
