A delicious and hearty sandwich featuring crispy breaded chicken, marinara sauce, and melted mozzarella and Parmesan cheeses, served on a toasted sandwich roll.
Ingredients

2 boneless, skinless chicken breasts

½ cup all-purpose flour

2 large eggs, beaten

1 cup Italian-style breadcrumbs

½ cup grated Parmesan cheese

1 cup marinara sauce

1 cup shredded mozzarella cheese

4 sandwich rolls or hoagie buns

Salt and pepper to taste

Instructions
Slice chicken breasts in half horizontally to create 4 thin cutlets. Season with salt and pepper. Dredge each cutlet in flour, dip in beaten eggs, then coat with a mixture of breadcrumbs and Parmesan cheese. Heat oil in a skillet over medium heat and fry chicken cutlets until golden brown and cooked through, about 3–4 minutes per side. Drain on paper towels. Preheat broiler. Place sandwich rolls open-faced on a baking sheet and toast lightly if desired. Place a chicken cutlet on each roll. Spoon marinara sauce over the chicken, then top with mozzarella cheese. Broil sandwiches for 2–3 minutes, or until cheese is melted and bubbly. Close sandwiches and serve hot.
Notes
Use fresh mozzarella for extra melty texture. Try adding fresh basil or a drizzle of balsamic glaze for extra flavor. You can bake the breaded chicken instead of frying for a lighter version.
