Description

Queso Fundido Taquitos are inspired by the rich, melty flavors of the classic Mexican queso fundido dip. Filled with chorizo, roasted peppers, and two cheeses, then rolled in warm corn tortillas and crisped to perfection—these taquitos are perfect for entertaining or a fun family dinner.

Ingredients

For 10 taquitos :
½ lb Mexican chorizo, casing removed
½ cup diced onion
½ cup roasted poblano or bell pepper, chopped
1½ cups shredded Monterey Jack cheese
1 cup shredded Oaxaca or mozzarella cheese
10 small corn tortillas
Vegetable oil, for frying or brushing

Optional for serving:
Fresh cilantro
Sour cream
Salsa
Guacamole or queso dip

Instructions

1. Prepare the Filling
In a skillet over medium heat, cook the chorizo and diced onion until browned and cooked through, about 6–8 minutes. Stir in the roasted peppers and remove from heat. In a mixing bowl, combine the cooked chorizo mixture with both cheeses. Set aside.

2. Assemble the Taquitos
Warm tortillas in the microwave or a skillet until pliable. Spoon about 2 tablespoons of the filling onto each tortilla. Roll tightly into taquitos and secure with a toothpick if needed.

3. Cook the Taquitos
For frying: Heat ½ inch of oil in a skillet over medium-high heat. Fry taquitos in batches, turning occasionally, until golden and crispy, about 2–3 minutes per side. Drain on paper towels.
For baking: Preheat oven to 425°F (220°C). Place taquitos seam-side down on a baking sheet. Brush lightly with oil and bake for 15–20 minutes, or until golden and crispy.

4. Serve
Serve hot with your choice of cilantro, sour cream, salsa, or guacamole for dipping.

Recipe Notes

Use vegetarian chorizo for a meatless version. Make ahead: Assemble and refrigerate up to a day in advance. Reheat in the oven before serving. Pair with queso dip for double the cheese indulgence.
