Description
No Bake Turtle Pie is a decadent dessert with a chocolate cookie crust, creamy caramel cheesecake filling, and toppings of rich chocolate, gooey caramel, and crunchy pecans — all without needing to turn on the oven.
Ingredients
1 chocolate cookie pie crust (store-bought or homemade)
8 oz cream cheese, softened
1/4 cup granulated sugar
1 tsp vanilla extract
1 cup caramel sauce, divided
1 cup whipped topping (such as Cool Whip)
1/2 cup chopped pecans
1/4 cup mini chocolate chips or chocolate sauce for drizzling

Instructions
In a medium bowl, beat cream cheese, sugar, and vanilla extract until smooth and fluffy. Mix in 1/2 cup of the caramel sauce until fully incorporated. Fold in the whipped topping gently until well combined. Spoon the filling into the chocolate cookie crust and smooth the top with a spatula. Drizzle remaining caramel sauce over the top and sprinkle with chopped pecans and mini chocolate chips or a drizzle of chocolate sauce. Refrigerate the pie for at least 4 hours or until firm. Slice and serve chilled.
Notes
For a homemade crust, mix 1 1/2 cups crushed chocolate cookies with 5 tbsp melted butter and press into a pie dish. Store pie in the refrigerator for up to 5 days. You can freeze the pie for longer storage, just thaw in the fridge before serving.
