Ingredients

Salad
2 cups cooked crispy chicken (fried or baked chicken bites)
4 cups mixed salad greens
1/2 cup cherry tomatoes, halved
1/2 cup cucumber, sliced
1/4 cup red onion, thinly sliced
1/4 cup shredded carrots
1/4 cup crumbled feta or shredded cheddar (optional)
1/4 cup chopped pecans or almonds (optional)

Hot Honey
1/4 cup honey
1 teaspoon red pepper flakes (adjust to taste)
1 teaspoon apple cider vinegar

Dressing
2 tablespoons mayonnaise or Greek yogurt
1 tablespoon lemon juice
1 teaspoon Dijon mustard
Salt and pepper to taste

Instructions

  1. Make the Hot Honey: In a small saucepan, combine honey, red pepper flakes, and apple cider vinegar. Warm over low heat for 2–3 minutes, then set aside to cool.
  2. Make the Dressing: In a separate bowl, whisk together mayonnaise (or Greek yogurt), lemon juice, Dijon mustard, salt, and pepper.
  3. Assemble the Salad: In a large salad bowl, layer the salad greens, cherry tomatoes, cucumber, red onion, carrots, and optional cheese or nuts.
  4. Add Chicken & Drizzle: Place the crispy chicken pieces on top. Drizzle with the dressing and a generous spoonful of the hot honey.
  5. Serve: Toss lightly to combine or serve as a composed salad for presentation.

Notes

Use store-bought or homemade crispy chicken depending on your preference.
Adjust the spice level of the hot honey by increasing or decreasing red pepper flakes.
