A creamy and savory olive ricotta dip made with ricotta cheese, chopped olives, and herbs. Perfect as a spread for crackers, bread, or vegetables.

Ingredients

  • 1 cup ricotta cheese
  • ½ cup mixed olives, pitted and finely chopped
  • 1 tablespoon olive oil
  • 1 teaspoon lemon juice
  • ½ teaspoon garlic powder
  • 1 tablespoon chopped fresh parsley
  • Salt, to taste
  • Black pepper, to taste

Instructions

In a mixing bowl, combine the ricotta cheese, chopped olives, olive oil, and lemon juice.
Add garlic powder, parsley, salt, and black pepper to the mixture.
Stir until well combined and creamy.
Transfer to a serving bowl and garnish with a drizzle of olive oil and extra chopped parsley if desired.
Serve immediately or chill for 15–20 minutes for enhanced flavor.

Notes

Use a mix of green and black olives for more flavor complexity.
Can be made ahead and stored in the fridge for up to 2 days.
Great with pita chips, crostini, or fresh veggies.
