For the Fries

  • 500g frozen or fresh-cut fries (thick-cut or crinkle-cut preferred)

  • 2 tbsp olive oil (if baking fresh fries)

  • 1 tbsp Cajun seasoning (store-bought or homemade)

  • ½ tsp garlic powder

  • ½ tsp smoked paprika

  • ¼ tsp black pepper

  • Pinch of salt (if Cajun seasoning is low-sodium)

For the Cheese Sauce

  • 1 tbsp butter or plant-based butter

  • 1 tbsp all-purpose flour

  • 200ml milk (dairy or plant-based)

  • 100g shredded cheddar cheese

  • ¼ tsp Cajun seasoning

  • Pinch of salt and black pepper

For the Voodoo Sauce

  • 4 tbsp mayonnaise

  • 2 tbsp ketchup

  • 1 tbsp Dijon mustard

  • 1 tsp hot sauce (adjust to heat preference)

  • 1 tsp garlic powder

  • ½ tsp smoked paprika

  • 1 tsp vinegar or lemon juice

  • 1 tsp sugar or honey

Toppings (Optional but Recommended)

  • Sliced jalapeños (fresh or pickled)

  • Diced red onions

  • Chopped scallions

  • Fresh chopped parsley or coriander

  • Crumbled cheese or dairy-free cheese

  • Sliced olives

  • Optional: sautéed mushrooms, grilled chicken, or spiced chickpeas


Instructions

1. Prepare the Fries
If using fresh potatoes, cut into thick fries and soak in cold water for 30 minutes.
Drain, pat dry, and toss with olive oil, Cajun seasoning, garlic powder, paprika, black pepper, and salt.
Bake at 220°C (425°F) for 25–30 minutes or air fry until golden and crispy.
If using frozen fries, bake or air fry according to package directions, then toss with Cajun seasoning while hot.

2. Make the Cheese Sauce
In a saucepan, melt butter over medium heat and whisk in the flour to make a roux.
Cook for 1–2 minutes, then slowly whisk in the milk until smooth.
Stir until thickened, then add cheddar cheese, Cajun seasoning, salt, and pepper.
Stir until cheese is melted and sauce is smooth and creamy. Set aside.

3. Make the Voodoo Sauce
In a bowl, combine mayonnaise, ketchup, Dijon mustard, hot sauce, garlic powder, smoked paprika, vinegar or lemon juice, and sugar or honey.
Whisk until smooth. Taste and adjust heat or tang as desired.

 

4. Assemble the Fries
Place hot fries on a large serving tray or plate.
Drizzle generously with cheese sauce.
Top with jalapeños, red onions, scallions, and herbs.
Finish with a drizzle of voodoo sauce. Serve immediately for best texture and flavor.


Notes

  • Fry Tips: For ultra-crispy fries, use an air fryer or double-bake fresh-cut potatoes.

  • Make It Vegan: Use dairy-free cheese, plant-based milk and butter, and vegan mayo for a fully vegan version.

  • Add Protein: Top with cooked ground beef, grilled chicken, or spicy chickpeas to turn it into a full meal.

  • Spice Level: Adjust the hot sauce in the voodoo sauce to match your heat preference.
