Description

Crispy fries smothered in melted cheese, caramelized onions, and a tangy special sauce — just like the fast food favorite, made right at home.

Ingredients

Scale

Special Sauce

  • ½ cup mayonnaise

  • 2 tbsp ketchup

  • ½ tbsp rice vinegar (or white vinegar)

  • 2 tbsp sweet relish

  • 1 tbsp sugar

  • ½ tbsp chili flakes (optional, for heat)

Main Ingredients

  • ½ bag frozen fries

  • Sliced American cheese or shredded cheddar cheese

  • 2 onions, finely diced

  • 2 tbsp butter

  • 1 tbsp neutral oil (vegetable, canola, etc.)

  • ½ tsp salt

Instructions

1. Caramelize the Onions

  • In a large skillet over medium-low heat, melt the butter and add the neutral oil.

  • Stir in the diced onions and salt.

  • Cook slowly for 30+ minutes, stirring every few minutes until deep golden brown.

  • Tip: If onions begin to brown too quickly or burn, lower the heat slightly and stir more frequently.

2. Make the Special Sauce

  • In a small bowl, mix together mayonnaise, ketchup, vinegar, relish, sugar, and optional chili flakes.

  • Stir until fully combined and smooth. Set aside.

3. Prepare the Fries

  • Cook frozen fries according to package directions (bake, air fry, or deep fry).

  • When hot and crispy, transfer to an oven-safe tray.

4. Assemble & Finish

  • While fries are still hot, top with slices of American cheese or shredded cheddar.

  • Place under a broiler for 3–5 minutes, or until cheese is melted and bubbly.

  • Remove and top with a generous helping of caramelized onions and a drizzle of special sauce.

Notes

  • Cheese: In-N-Out uses American cheese, but shredded cheddar works well too — use your favorite.

  • Sauce Heat: Chili flakes aren’t part of the traditional recipe but add a great kick if you like spice.

  • Onions: Caramelization takes patience — don’t rush! Stir often and keep the heat low.

  • Serving Suggestion: Enjoy immediately for the best taste and texture.
