Ingredients
Special Sauce
- ½ cup mayonnaise
- 2 tbsp ketchup
- ½ tbsp rice vinegar (or white vinegar)
- 2 tbsp sweet relish
- 1 tbsp sugar
- ½ tbsp chili flakes (optional, for heat)

- ½ bag frozen fries
- Sliced American cheese or shredded cheddar cheese
- 2 onions, finely diced
- 2 tbsp butter
- 1 tbsp neutral oil (vegetable, canola, etc.)
- ½ tsp salt

Instructions
1. Caramelize the Onions
- In a large skillet over medium-low heat, melt the butter and add the neutral oil.
- Stir in the diced onions and salt.
- Cook slowly for 30+ minutes, stirring every few minutes until deep golden brown.
- Tip: If onions begin to brown too quickly or burn, lower the heat slightly and stir more frequently.
2. Make the Special Sauce
- In a small bowl, mix together mayonnaise, ketchup, vinegar, relish, sugar, and optional chili flakes.
- Stir until fully combined and smooth. Set aside.
3. Prepare the Fries
- Cook frozen fries according to package directions (bake, air fry, or deep fry).
- When hot and crispy, transfer to an oven-safe tray.
4. Assemble & Finish
- While fries are still hot, top with slices of American cheese or shredded cheddar.
- Place under a broiler for 3–5 minutes, or until cheese is melted and bubbly.
- Remove and top with a generous helping of caramelized onions and a drizzle of special sauce.
