  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 6 large flour tortillas
  • ½ cup sour cream
  • ½ cup shredded lettuce
  • ½ cup diced tomatoes
  • ¼ cup chopped cilantro (optional)

For the Fries

  • 4 medium russet potatoes
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp paprika
  • ½ tsp salt
  • ½ tsp pepper

Instructions

Step 1: Prep the Potatoes

  1. Wash and peel the potatoes (peeling optional).
  2. Cut into evenly sized fries and soak in cold water for 30 minutes to remove excess starch.
  3. Drain and pat dry thoroughly.

Step 2: Bake or Fry the Fries

  • Oven Method:
    Preheat oven to 425°F (220°C). Toss fries with olive oil, garlic powder, paprika, salt, and pepper. Spread on a baking sheet in a single layer and bake for 25–30 minutes, flipping halfway through.
  • Frying Method:
    Heat oil in a deep fryer to 375°F (190°C). Fry in batches until golden brown and crispy. Drain on paper towels.

Step 3: Cook the Beef Filling

  1. Heat olive oil in a large skillet over medium heat.
  2. Add onions and cook until softened, about 3–4 minutes.
