  • 2 pears, thinly sliced

  • 4 oz (120g) Gorgonzola cheese, crumbled

  • 1/4 cup (60ml) honey

  • 1/4 cup (30g) chopped walnuts

  • A handful of arugula leaves

  • 1 tbsp olive oil

  • Freshly cracked black pepper

Optional substitutions:

  • Swap Gorgonzola with goat cheese or blue cheese

  • Use pecans instead of walnuts for a twist


Instructions

Step 1: Prepare Your Base
Preheat your oven to 400°F (200°C). Roll out the puff pastry on a lightly floured surface and place it on a baking sheet. If using flatbread, place it directly on the sheet.
Step 2: Add Olive Oil
Drizzle olive oil evenly over the flatbread or puff pastry base for added flavor and to prevent sticking.
Step 3: Layer the Pears
Arrange the pear slices slightly overlapping to cover the base entirely.
Step 4: Sprinkle Gorgonzola
Scatter crumbled Gorgonzola cheese over the pears.
Step 5: Bake
Bake in the preheated oven for 15–20 minutes, or until the base is golden and crisp, and the cheese has melted.
Step 6: Final Touches
Remove the flatbread from the oven. Drizzle honey generously over it, then top with chopped walnuts, arugula leaves, and freshly cracked black pepper.


Notes

Use ripe but firm pears (like Bosc or Anjou) for the best texture and sweetness.
If you’re not a fan of Gorgonzola, goat cheese or blue cheese both work well.
Walnuts bring earthiness and crunch, but pecans or pistachios are great alternatives.
Adjust the honey to your preference depending on how sweet your pears are.
Chill the puff pastry before rolling to make it easier to handle and to ensure a flaky texture.
