Description

Bright, fruity, and irresistibly rich, these Strawberry Lime Gooey Bars are the ultimate spring or summer treat. Made with just six simple ingredients—including boxed cake mix and sweetened condensed milk—this easy dessert comes together in under an hour and is packed with flavor.

  • 1 box (15.25 oz) strawberry cake mix

  • ½ cup (1 stick) unsalted butter, softened

  • 1 large egg, room temperature

  • 1 lime, zested and juiced

  • ⅔ cup white chocolate chips

  • ½ cup sweetened condensed milk

  • Additional lime zest, for garnish (optional)


Instructions

1. Prep the Pan
Preheat oven to 350°F (175°C). Line a 9×9-inch baking pan with aluminum foil and lightly coat with nonstick spray.

2. Make the Dough
In a large mixing bowl, beat the softened butter until fluffy. Add cake mix, egg, lime juice, and lime zest. Beat until fully combined and a thick dough forms.

3. Assemble the Layers
Press about two-thirds of the dough into the bottom of the prepared pan to form an even layer. Sprinkle white chocolate chips evenly over the dough. Drizzle sweetened condensed milk over the chips. Crumble the remaining dough on top, spreading it out as evenly as possible. Gently press to flatten slightly.

4. Bake
Bake for 29–32 minutes, or until the edges are golden and the center is set. Remove from oven and allow bars to cool completely in the pan before slicing.

 

5. Serve & Store
Optional: Garnish with extra lime zest for a fresh burst of citrus flavor. Cut into bars and serve. Store leftovers in an airtight container at room temperature for up to 1 week.


Notes

Extra gooey texture? Add a couple extra tablespoons of sweetened condensed milk before baking.
Zingy flavor boost: Use key lime juice if available for a slightly more tart twist.
Make it a mix-up: Swap the white chocolate chips with coconut flakes or chopped macadamia nuts for a tropical variation.
