One-Pot Teriyaki Noodles

This easy vegetarian meal is made with vegetables, noodles, and a simple homemade sauce all made in one pot! Perfect as a meatless main dish or the perfect accompaniment to teriyaki chicken. Quick & easy, your family will fall in love!

Ingredients

  • ½ green cabbage, shredded
  • 2 carrots, shredded
  • 1 teaspoon olive oil
  • ⅔ cup soy sauce
  • ½ cup brown sugar
  • ½ teaspoon ground mustard
  • 1 teaspoon ground ginger
  • ½ teaspoon garlic powder
  • 16 oz spaghetti (1 pound box)
  • 3 ½ cups water
  • 1 tablespoon sesame seeds

Instructions

Heat a large pot over medium-high heat. Once hot, add olive oil, shredded cabbage, and carrots. Sauté about 5 minutes until vegetables start to become tender. Add soy sauce, brown sugar, ground mustard, ground ginger, and garlic powder to the pot; mix well. Add spaghetti to the pot (breaking in half is optional). Pour in 3 ½ cups of water. Cook uncovered for 15-18 minutes*. Once the noodles start to become bendable, stir every few minutes, increasing stirring frequency near the end to prevent sticking. When noodles are cooked through, remove from heat and toss in sesame seeds. Serve immediately. Garnish with additional sesame seeds and green onions if desired.

Notes

Different pasta brands may need slightly different water amounts. If noodles aren’t cooked but water is low near the end, add ½ cup more water and continue cooking until tender and sauce thickens.
A good substitute for green cabbage is napa cabbage.
To reheat leftovers, splash a little water on noodles before microwaving to prevent drying out.
