Ingredients
1 lb wild-caught salmon fillet
¼ cup unsalted butter, melted
2 tablespoons grainy Dijon mustard
2 tablespoons soy sauce
2 tablespoons pure maple syrup
3 cloves garlic, minced
1 cup grape or cherry tomatoes
2 lemons, halved
Olive oil, for drizzling
Salt, to taste

Instructions
Preheat the oven to 400°F (200°C) and lightly grease a baking dish with olive oil. In a small bowl, whisk together the melted butter, Dijon mustard, soy sauce, maple syrup, and minced garlic until well combined. Place the salmon fillet in the prepared baking dish and sprinkle with salt to taste. Brush the maple mustard mixture generously over the salmon until fully coated. Scatter the grape or cherry tomatoes around the salmon and place the halved lemons in the dish, cut-side up. Bake for 18–20 minutes, or until the salmon is cooked through and flakes easily with a fork; the tomatoes should be bursting. Remove from the oven and squeeze the roasted lemons over the salmon just before serving. Serve warm with rice, roasted vegetables, or a fresh salad.

• Wild-caught salmon is preferred for its flavor and texture, but farmed salmon works too.
• If using skin-on salmon, place it skin-side down for crispier results.
