Ingredients

Chicken & Marinade

  • 6 boneless, skinless chicken thighs, cubed
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried parsley
  • 1 teaspoon chili flakes
  • 3 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1 teaspoon salt
  • ½ teaspoon black pepper

Bang Bang Sauce

  • ¾ cup mayonnaise
  • ½ cup Thai sweet chili sauce
  • 1 tablespoon fresh parsley, chopped
  • Pinch of salt

Instructions

Soak wooden skewers in water for 20–30 minutes to prevent burning.
Dice the chicken thighs into even cubes and set aside.
In a large bowl, combine the chicken with olive oil, garlic powder, smoked paprika, parsley, chili flakes, lemon juice, salt, and pepper. Toss until evenly coated.
Thread 5–7 pieces of chicken onto each skewer.
In a small bowl, mix together mayonnaise, Thai sweet chili sauce, chopped parsley, and a pinch of salt. Divide the sauce in half—reserve one portion for later, and use the other to coat the chicken skewers.
Line a baking sheet with parchment paper (or use a baking rack on the tray). Place the skewers in a single layer, evenly spaced.
Preheat the oven to 400°F (200°C). Bake the skewers for 20–25 minutes, flipping halfway through, until the chicken reaches an internal temperature of 165°F (74°C).
Remove from the oven and brush the skewers with the reserved Bang Bang sauce. Serve hot and enjoy!
