Craving something sweet, tasty, and delicious? I got you! My unique Easy Gooey Marshmallow Cookies With Chocolate Chips will have you hooked from the very first bite. They’re fudgy, chewy, brownie-like cookies stuffed with marshmallows—and they’re so easy to make.
Prep Time: 20 minutes
Cook Time: 10 minutes
Resting Time: 1 day
Total Time: 30 minutes (plus chilling)
Servings: 9 cookies
Ingredients
- 2 ⅔ cups all-purpose flour
- 1 teaspoon baking powder
- ½ teaspoon salt
- 1 cup unsalted butter, softened
- ½ cup granulated sugar
- ¾ cup brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 9 large marshmallows
- ½ cup semi-sweet chocolate chips

Instructions
In a bowl, combine the flour, baking powder, and salt. In another bowl, mix together the granulated sugar, brown sugar, softened butter, eggs, and vanilla extract until well combined. Gradually add the dry ingredients to the wet ingredients, stirring until a dough forms. Transfer the cookie dough to an airtight container and refrigerate for 24 hours. Preheat the oven to 375°F (190°C). Take portions of the chilled dough, flatten them in your hands, place a marshmallow in the center, and seal the dough around it. Repeat until all dough is used. Sprinkle semi-sweet chocolate chips (and holiday sprinkles, if desired) on top of each cookie. Bake in the preheated oven for 10 minutes. Allow the cookies to cool on a wire rack for a few minutes before serving. Enjoy your delicious treats!

Notes
Chilling the dough for 24 hours enhances flavor and texture—don’t skip it! If your marshmallows are very sticky, lightly grease your hands before wrapping them in dough. You can use mini marshmallows (3–4 per cookie) as an alternative to one large one. For gooier centers, bake slightly under 10 minutes and allow to finish setting on the tray. These cookies are best fresh but can be stored in an airtight container for up to 3 days. Reheat in the microwave for a few seconds to revive that gooey center!
