Description

These Apple Pie Enchiladas take everything you love about warm, spiced apple pie and wrap it in soft flour tortillas, then bake it all in a rich caramel-like sauce. The result is a crowd-pleasing dessert that’s easy enough for weeknights and special enough for holiday tables. Serve them warm with ice cream or whipped cream for the ultimate treat.

For the Enchiladas:

  • 2 (21 oz) cans apple pie filling (or 4 cups homemade)

  • 8 (8-inch) flour tortillas

  • 1 tsp ground cinnamon

For the Sauce:

  • ½ cup unsalted butter

  • ½ cup granulated sugar

  • ½ cup brown sugar, packed

  • ½ cup water

  • ½ tsp vanilla extract


Instructions

1. Preheat the Oven:

  • Preheat oven to 350°F (175°C).

  • Lightly grease a 9×13-inch baking dish.

2. Assemble the Enchiladas:

  • Spoon about ½ cup apple pie filling onto the center of each tortilla.

  • Sprinkle with a pinch of cinnamon.

  • Roll tightly, folding in the sides as you go, and place seam-side down in the prepared baking dish.

  • Repeat with all tortillas.

3. Prepare the Sauce:

  • In a medium saucepan, melt butter over medium heat.

  • Stir in granulated sugar, brown sugar, and water.

  • Bring to a boil, stirring often, then reduce heat and simmer for 3 minutes.

  • Remove from heat and stir in vanilla extract.

4. Pour the Sauce:

  • Pour the warm sauce evenly over the enchiladas in the baking dish, making sure they’re well coated.

5. Bake:

  • Cover with foil and bake for 20 minutes.

  • Remove foil and bake for an additional 10 minutes, or until the sauce is bubbling and the tortillas are golden.

6. Serve:

 

  • Allow to cool for 5–10 minutes before serving.

  • Best enjoyed warm with vanilla ice cream or whipped cream.


Notes

  • For added texture, stir chopped pecans or walnuts into the apple filling before assembling.

  • Double the sauce if you prefer extra caramel coating.

 

  • Substitute with homemade apple pie filling for a fresher, more customized flavor.
