These Apple Pie Enchiladas take everything you love about warm, spiced apple pie and wrap it in soft flour tortillas, then bake it all in a rich caramel-like sauce. The result is a crowd-pleasing dessert that’s easy enough for weeknights and special enough for holiday tables. Serve them warm with ice cream or whipped cream for the ultimate treat.
Ingredients
For the Enchiladas:

2 (21 oz) cans apple pie filling (or 4 cups homemade)

8 (8-inch) flour tortillas

1 tsp ground cinnamon
For the Sauce:

½ cup unsalted butter
-
½ cup granulated sugar
-
½ cup brown sugar, packed
-
½ cup water
-
½ tsp vanilla extract
Instructions
1. Preheat the Oven:

Preheat oven to 350°F (175°C).

Lightly grease a 9×13-inch baking dish.
2. Assemble the Enchiladas:

Spoon about ½ cup apple pie filling onto the center of each tortilla.

Sprinkle with a pinch of cinnamon.

Roll tightly, folding in the sides as you go, and place seam-side down in the prepared baking dish.

Repeat with all tortillas.
3. Prepare the Sauce:

In a medium saucepan, melt butter over medium heat.

Stir in granulated sugar, brown sugar, and water.

Bring to a boil, stirring often, then reduce heat and simmer for 3 minutes.

Remove from heat and stir in vanilla extract.
4. Pour the Sauce:

Pour the warm sauce evenly over the enchiladas in the baking dish, making sure they’re well coated.
5. Bake:

Cover with foil and bake for 20 minutes.

Remove foil and bake for an additional 10 minutes, or until the sauce is bubbling and the tortillas are golden.

Allow to cool for 5–10 minutes before serving.
