Ingredients
For the Coconut Curry Sauce

1 can (14 oz) full-fat coconut milk

For the Cod

4 cod fillets (about 6 oz each)

Instructions
1. Prepare the Sauce

In a medium saucepan, heat the olive oil over medium heat. Add the minced garlic and sauté for 1 minute until fragrant.

Stir in the curry powder, turmeric, ginger, and chili powder (if using). Cook for 1–2 minutes to toast the spices.

Pour in the coconut milk and bring to a gentle simmer. Stir in the lime juice, salt, pepper, and honey (if using). Let simmer for 5 minutes to slightly thicken.
2. Prepare the Cod

Preheat the oven to 375°F (190°C).

Pat the cod fillets dry and season with salt and pepper on both sides.

Place the fillets in a baking dish in a single layer. Pour the coconut curry sauce evenly over the cod.
3. Bake the Cod

Bake uncovered for 20–25 minutes, or until the cod is cooked through and flakes easily with a fork.
4. Finish and Serve
