Description

Fluffy pancakes wrapped around savory breakfast sausage and served with warm maple syrup—these Breakfast Pigs in a Blanket are the perfect blend of sweet and salty, and a guaranteed hit for breakfast or brunch!


Ingredients

  • 12 cooked breakfast sausage links

  • 1½ cups all-purpose flour

  • 2 tablespoons granulated sugar

  • 4 teaspoons baking powder

  • ½ teaspoon fine sea salt

  • 1⅓ cups buttermilk

  • 1 large egg, well beaten

  • 4 tablespoons unsalted butter, melted

  • 1 teaspoon vanilla extract

  • Maple syrup, for serving


Instructions

  • Cook the Sausage
    Cook the sausage links according to the package instructions and set aside.

  • Make the Pancake Batter
    In a large bowl, whisk together the flour, sugar, baking powder, and salt.
    In a separate bowl, whisk the buttermilk, egg, melted butter, and vanilla extract.
    Pour the wet ingredients into the dry and stir until just combined. Let the batter rest for 5 minutes.

  • Cook the Pancakes
    Heat a non-stick skillet over medium heat and lightly coat with cooking spray.
    Pour 3 tablespoons of batter onto the skillet and gently spread into a round.
    Cook for 2–3 minutes, until bubbles form on the surface and the underside is golden.
    Flip and cook for another 2–3 minutes. Remove from heat.

  • Wrap the Sausage
    While the pancake is still hot, place a sausage link in the center and roll it up, placing it seam-side down on a plate to hold its shape.

  • Repeat
    Continue cooking and rolling until all sausages and batter are used.

 

  • Serve
    Serve warm with maple syrup poured over the top or served on the side for dipping.


Notes

  • Syrup is not included in the nutritional information.

  • These can be frozen and reheated for a quick breakfast.

  • Try flavored pancakes by adding mini chocolate chips, blueberries, or chopped bananas to the batter.
