Breakfast spaghetti isn’t just for Buddy the Elf! This savory twist on a classic carbonara combines breakfast sausage, scrambled eggs, cheddar cheese, and pasta for a hearty, protein-packed start to your day.

Ingredients

  • 2 tablespoons butter
  • 1 pound breakfast sausage, cooked, crumbled, and drained
  • ½ to 1 pound spaghetti, cooked and drained
  • 8 large eggs, beaten until smooth
  • ¾ cup shredded cheddar cheese
  • Salt & pepper, to taste

Instructions

  1. Prepare the skillet:
    Melt butter in a large skillet over medium heat. Tilt the skillet to coat the bottom evenly.
  2. Add pasta and eggs:
    Spread the cooked spaghetti in the skillet. Pour the beaten eggs evenly over the pasta.
  3. Add sausage and cheese:
    Sprinkle the cooked sausage over the eggs and pasta, then top with shredded cheese. Stir to combine everything thoroughly.
  4. Cook:
    Continue cooking, stirring gently, until the eggs are fully set and cooked through.
  5. Season and serve:
    Season with salt and pepper to taste. Serve warm and enjoy!

Notes

  • Sausage substitute: If using sausage links, slice them thinly before adding.
  • For fluffier eggs: Whisk in 1–2 tablespoons of cream before adding the eggs.
