  • ¼ cup soy sauce (or low-sodium soy sauce)

  • 2 tablespoons honey (or maple syrup)

  • 2 tablespoons rice vinegar

  • 1 tablespoon fresh ginger, grated

  • 2 cloves garlic, minced (or use shallots for a milder flavor)

  • 1 tablespoon sesame oil

  • 2 green onions, thinly sliced (for garnish)

  • 1 tablespoon sesame seeds (for garnish)

  • Fresh cilantro, chopped (for garnish)

  • Lime wedges (for serving)


Instructions

1. Preheat Oven

Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease to prevent sticking.

2. Prepare the Glaze

In a small bowl, whisk together the soy sauce, honey, rice vinegar, ginger, garlic, and sesame oil until smooth and well combined.

3. Glaze the Cod

Place cod fillets on the prepared baking sheet. Brush each fillet generously with the ginger soy glaze, ensuring even coverage.

4. Bake the Cod

Bake for 12–15 minutes, or until the cod is opaque and flakes easily with a fork (internal temperature should reach 145°F/63°C).

5. Garnish & Serve

 

Transfer the fillets to serving plates. Garnish with green onions, sesame seeds, and chopped cilantro. Serve with lime wedges for a bright finish.


Notes

  • Fresh ingredients: Use fresh ginger and garlic for the best flavor—powdered substitutes may affect texture and taste.

  • Glaze tip: For a thicker sauce, simmer the glaze in a saucepan until slightly reduced before brushing onto the fish.

 

  • Don’t overcook: Keep an eye on the cod; overcooking can dry it out. The fish should flake easily and still be moist.
