Description

This hearty breakfast sandwich combines golden, buttery Texas toast, gooey melted cheese, and perfectly fried eggs. Whether you like your yolks runny or firm, this comforting grilled cheese is a delicious way to start your day.


Ingredients

  • 4 large eggs

  • 4 slices thick Texas toast

  • 2 slices Colby Jack cheese

  • 2 slices Pepper Jack cheese

  • Butter (for toasting)

  • Salt and pepper, to taste


Instructions

  • Prep the Bread
    Butter one side of each slice of bread and set aside.

  • Fry the Eggs
    In a frying pan over low heat, melt a bit of butter.
    Fry the eggs to your desired doneness—sunny-side up, over easy, or fully cooked.
    Season with salt and pepper. Set eggs aside once done.

  • Assemble the Sandwich
    In a clean frying pan or griddle, place one slice of bread, buttered side down.
    Layer with:

    • 1 slice Colby Jack

    • 2 fried eggs

    • 1 slice Pepper Jack

    • 1 slice of bread, buttered side up

 

  • Grill the Sandwich
    Cover the pan with a lid and cook over medium-low heat until the bread is golden brown and the cheese is fully melted, flipping once halfway through.
    Repeat for the second sandwich.


Notes

  • Use your favorite cheese combinations—American, cheddar, or Swiss work well too.

  • For a runny yolk, fry eggs sunny-side up or over easy. For a cleaner sandwich, cook eggs fully.

  • To reduce mess, press gently with a spatula as the sandwich grills.
