  • 2 tablespoons butter

  • ½ onion, diced

  • 1 lb breakfast sausage

  • 10 oz refrigerated biscuit dough, cut into small pieces

  • 5 eggs

  • ½ cup whole milk

  • 1 teaspoon dried oregano

  • 1½ cups shredded cheddar cheese

  • 1½ cups prepared country gravy


Instructions

  • Preheat oven to 350°F. Grease a 9×13-inch baking dish.

  • In a large skillet, melt butter and cook diced onion and sausage until browned. Drain excess grease.

  • Layer the cut biscuit pieces evenly in the baking dish.

  • Spoon the sausage and onion mixture over the biscuits.

  • In a bowl, whisk together eggs, milk, and oregano. Pour evenly over the casserole.

  • Sprinkle shredded cheese over the top.

  • Warm the prepared country gravy and drizzle it evenly over the casserole.

  • Bake for 30–40 minutes, or until golden brown and the center is set.

 

  • Let sit for 5 minutes before serving.


Notes

  • Make-Ahead: Assemble the casserole the night before, cover, and refrigerate. Bake in the morning as directed.

  • Customizations: Add cooked bacon, sautéed vegetables (like bell peppers or mushrooms), or substitute with different cheeses such as mozzarella, pepper jack, or Colby.
