  • 3 plain bagels, sliced
  • 6 large eggs, beaten
  • ⅛ teaspoon garlic powder
  • Salt and pepper, to taste
  • 10 fully cooked bacon slices, crumbled
  • 1 cup shredded mozzarella cheese
  • 1 cup shredded cheddar cheese

Instructions

  1. Preheat oven to 415°F and place sliced bagels cut-side up on an ungreased baking sheet.
  2. Scramble the eggs:
    In a medium bowl, whisk eggs with garlic powder, salt, and pepper. Scramble in a nonstick skillet over medium-high heat until just set.
  3. Assemble the bagels:
    • Evenly distribute the scrambled eggs over the bagel halves.
    • Sprinkle crumbled bacon over the eggs.
    • Toss mozzarella and cheddar together, then sprinkle over the top.
  4. Bake for 10 minutes or until the cheese is melted and bubbly.
  5. Cool slightly before serving. They’ll be hot right out of the oven!

  • To freeze: Let cooked bagels cool completely, then wrap individually in foil or plastic wrap. Store in a freezer-safe bag for up to 2 months.
