Description

A bold and fragrant marinade inspired by the sun-soaked flavors of Tuscany—lemon zest, fresh garlic, rosemary, and oregano. Perfect for grilled chicken, pork, steak, seafood, or vegetables, this quick marinade adds big flavor in just minutes.


Ingredients

  • ⅓ cup olive oil

  • 2 lemons, zested and juiced

  • 6 cloves garlic, grated or crushed

  • 4 sprigs fresh rosemary, chopped or halved

  • 1 tablespoon dried oregano

  • ½1 teaspoon crushed red pepper flakes (adjust to taste)

  • 2 teaspoons kosher salt

  • 1 teaspoon ground black pepper

  • 2 pounds of meat or vegetables (chicken, pork, beef, lamb, seafood, or mixed vegetables)


Instructions

  • Prepare the Marinade
    In a medium bowl or mason jar, combine olive oil, lemon zest, lemon juice, garlic, rosemary, oregano, red pepper flakes, salt, and black pepper.
    Whisk well or seal the jar and shake vigorously to combine.

  • Marinate the Protein or Veggies
    Place your chosen meat or vegetables in a bowl or resealable bag. Pour the marinade over, ensuring everything is coated.
    Cover and refrigerate for the suggested marinating time (see notes).

 

  • Grill or Roast as Desired
    Remove from marinade, discard excess, and cook your protein or veggies to your liking. Enjoy!


Notes

  • Storage: Marinade can be prepared in advance and stored in the refrigerator for up to 5 days in an airtight container.

 

  • Marinating Times:

    • Seafood: 20 minutes to 1 hour

    • Chicken & Pork: 4 to 6 hours

    • Beef & Lamb: 12 to 24 hours

    • Vegetables: 20 minutes to 24 hours
