Copycat Costco Chicken Bake

A better-than-store-bought version of the famous Costco Chicken Bake, made at home with fresh pizza dough, creamy Caesar dressing, juicy chicken, bacon, cheese, and green onions—all wrapped into a cheesy, golden crust.

Ingredients

  • 1 pound prepared pizza dough
  • 3 boneless, skinless chicken breasts
  • 1 teaspoon kosher salt
  • ½ teaspoon freshly ground black pepper
  • 1 teaspoon garlic powder
  • 1½ tablespoons olive oil
  • ¾ cup water, or more as needed
  • 1 tablespoon all-purpose flour, for dusting
  • ½ cup creamy Caesar dressing
  • 6 slices bacon, cooked and crumbled
  • 2 green onions, thinly sliced
  • 1 cup shredded Italian cheese blend (such as mozzarella and provolone), divided
  • ¾ cup shredded Parmesan cheese, divided
  • 1 large egg, beaten

Instructions

1. Prepare the Dough & Bacon

  • Let pizza dough rest at room temperature for 1 hour.
  • Preheat oven to 350°F (175°C). Line a baking sheet with foil and lay bacon slices in a single layer.
  • Bake until crisp and browned, about 15 minutes. Drain on paper towels and crumble when cooled. Leave the oven on.

2. Cook the Chicken

  • Season chicken with salt, pepper, and garlic powder.
  • Heat olive oil in a large oven-safe skillet over medium-high heat.
  • Sear chicken (seasoned side down) for about 5 minutes, flip, and cook for 1 more minute.
  • Add just enough water to cover the bottom of the skillet and transfer to the oven.
  • Bake chicken until it reaches 165°F (74°C) internally, about 17–20 minutes.
  • Remove from oven, cool slightly, then chop into small pieces.

3. Assemble the Chicken Bakes

  • Increase oven temperature to 400°F (200°C). Line a new baking sheet with parchment.
  • Lightly flour a work surface. Divide dough into 3 equal portions.
  • Roll each portion into a 12–13-inch round.
  • Spread Caesar dressing evenly over each circle, leaving a 1-inch border.
  • Sprinkle each with 2 tablespoons Parmesan cheese.
  • Top evenly with chopped chicken, bacon, green onions, and remaining Italian cheese blend.
  • Fold in the sides, roll from the bottom edge up, and shape into a sealed log about 12 inches long.
  • Place seam-side down on prepared baking sheet.

4. Bake

  • Brush tops with beaten egg. Sprinkle with reserved Italian cheese and 1 tablespoon Parmesan per roll.
  • Bake at 400°F for 20 minutes, or until golden brown.
  • Let cool for a few minutes, slice, and serve warm.
