This Philly Cheesesteak Meatloaf combines juicy ground beef, sautéed onions, peppers, mushrooms, and gooey provolone cheese for a hearty, crowd-pleasing meal. It’s the perfect fusion of a cheesesteak and traditional meatloaf—ideal for weeknight dinners or casual gatherings.

Ingredients

  • 1 pound ground beef
  • ½ cup breadcrumbs
  • ¼ cup grated Parmesan cheese
  • ¼ cup milk
  • 1 onion, diced
  • 1 green bell pepper, diced
  • 8 oz sliced mushrooms
  • 1 cup shredded provolone cheese
  • Salt and black pepper, to taste

Instructions

1. Preheat the Oven

Preheat oven to 350°F (175°C). Lightly grease a loaf pan and set aside.

2. Make the Meatloaf Base

In a large mixing bowl, combine the ground beef, breadcrumbs, Parmesan, milk, salt, and pepper. Mix until just combined—do not overmix.

3. Form the Meatloaf

Press the meat mixture into the prepared loaf pan, then create a shallow well down the center lengthwise to hold the filling.

4. Prepare the Filling

In a skillet over medium heat, sauté the onions, bell pepper, and mushrooms until softened, about 6–8 minutes. Spoon the cooked vegetables into the well in the meatloaf.

5. Add the Cheese

Sprinkle the shredded provolone generously over the top of the meatloaf.

6. Bake

Bake for 1 hour, or until the internal temperature reaches 160°F (71°C) and the cheese is bubbly and golden.

7. Rest and Serve

Remove from oven and let the meatloaf rest for 10 minutes before slicing. Serve warm.

Notes

  • Meat Choice: Use lean ground beef (85/15) for a good balance of flavor and moisture. You can also substitute half the beef with ground pork for extra richness.
  • Make Ahead: The meatloaf can be assembled a day in advance and refrigerated, then baked just before serving.
  • Cheese Options: Substitute provolone with mozzarella, Monterey Jack, or a provolone-mozzarella blend.
  • Extra Flavor Boost: Add 1 tablespoon of Worcestershire sauce or a teaspoon of garlic powder to the meat mixture for deeper flavor.
  • Serving Suggestion: Pair with mashed potatoes, roasted green beans, or a crisp green salad.
