Description
A bold and flavorful pizza combining smoky mozzarella, rich white sauce, spicy Italian sausage, and red onions, all balanced by a drizzle of raw honey.
Ingredients

1 prepared pizza dough, at room temperature

¼–½ cup white sauce (see Wild Palms Pizza Post for recipe)

½ cup shredded mozzarella cheese

½ cup smoked mozzarella cheese

12–16 oz hot Italian sausage (4–5 links), casings removed, browned and crumbled

¼ large red onion, thinly sliced into rounds

Drizzle of raw honey, to finish

Olive oil, for greasing
Instructions
Preheat the oven to 450°F (230°C). Let the pizza dough sit at room temperature for at least 30 minutes, preferably 45 minutes, to make it easier to roll out. In a skillet over medium-low heat, remove the casings from the sausage and cook, breaking it into crumbles until browned. Drain any excess fat and set aside. Prepare the white sauce according to your preferred recipe. Lightly grease a quarter sheet pan with olive oil and set it near your assembly station. On a floured surface, roll out the dough to approximately 9×13 inches and transfer it to the greased sheet pan. Spread a thin, even layer of white sauce over the dough, followed by a sprinkle of mozzarella cheese. Add crumbled sausage, more cheese, and sliced red onions, alternating between regular and smoked mozzarella until all the sausage is used, finishing with a layer of cheese. Bake for 12–15 minutes, or until the crust is golden brown and the cheese is bubbling and slightly browned. Remove from the oven and immediately drizzle with raw honey before slicing and serving.

For extra crispiness, bake directly on a preheated pizza stone instead of a sheet pan.

Substitute mild Italian sausage if you prefer less heat.
